Four Pillars is coming to Pilot for one night only!
We will be offering a selection of snacks accompanied by Four Pillars gin and cocktail pairings highlighting the story, flavours and complexity of the products.
Alongside the pairings you are welcome to try the individual spirits and chat to creative director Nick Tesar throughout the night.

Four Pillars
It all started back in 2013 with three mates and one extraordinary copper still. 2015 brought the establishment of the Four Pillars distillery in the Yarra Valley that we know and love.
In 2019, 2020, and 2023 the Four Pillars Gin was named the world’s leading gin producer by the IWSC in London. This was the first time a gin maker ever claimed the title of World’s Best three times. They were also the first distillery in Australia to be certified carbon neutral.
Working with native Australian ingredients and a holistic approach Four Pillars has secured their product and brand as impressive and delicious, but more importantly made by great people that care.
Nick Tesar
Nick has worked at some of Melbourne's best venues - Bar Liberty, Lume, and Gin Palace (a.k.a. the beloved bar that Four Pillars first launched their gin business at all those years ago!) - co-authored a killer cocktail book, and judged countless spirit shows.
He is also the co-owner of the outstanding Marionette Liqueur business, where he and a couple of Melbourne-based friends work with local farms to produce stunning cocktail liqueurs.
As the Creative Director Nick's job is to head up the creative team, working with bar staff across both the Healesville Distillery and Sydney Laboratory to design drinks and experiment with the Four Pillars range.
The Event
Pricing is per person, charged on the evening, and includes four drinks, four snacks, and all tastings of the products.
The snacks will also include the Four Pillars Marmalade, Gin Salt, and Bloody Shiraz Gin Caviar, a collaboration with Yarra Valley Caviar.
Matching cocktails will be made by Pilot Beverage Creator Tom Opie and highlight the flavours of four signature gins:
Olive Leaf, El Cuatro, Peachy and Rare Dry.
The regular Pilot menu is not available on this night so if you are looking for a substantial dinner afterward we welcome you to book Such and Such with 10% off for all diners.

Reservations can be made for anytime between 5pm - 6:30pm.

Each month we select an organisation we would like to support and raise funds for.
The idea is simple, guests select the amount they would like to pay for corkage with 100% of corkage sales going to the chosen organisation for the month.
